Thai noodles dishes are highly 'customisable', from the choice of types of noodles to the toppings and sauces. Eaten either 'Soupy', noodles served in broth, or 'Dried'; it is always served with the optional condiments of slice mild chillies in vinegar, fish sauce, white sugar and dried chilli flakes. These minced pork balls are well seasoned with fish sauce, grated ginger and garlic served in this instance with fine rice noodles, a handful of beansprouts, spring onions, fresh cilantro, fried garlic and a drizzle of garlic oil in a clear broth.
