We are kick-starting the Chinese series with truly traditional Cantonese dishes. What is more famous than the Sweet and Sour or Black bean dishes? Egg-fried rice! There is a tip to good fried rice, I look forward to sharing tips and trade secrets with you so that you can recreate these delightful recipes at home for your next tantalising meal.

You will be welcomed with a freshly shaken 

Firecracker

Pomegranate juice, cranberry juice, and a dash of grenadine topped with chilled fizzy pink lemonade

You will learn:

- Knife sharpening and cutting skills

- Vegetable carving for garnish

- Presentation and plating skills

Recipes on this course may include:

Sweet & Sour Pork

Sweet and sour pork is reminiscent of Cantonese cuisine, this is the one time where only tinned pineapple can bring back the nostalgia of good old traditional sweet and sour - all tossed together with crispy battered pork pieces, red capsicum, sweet onion, rice vinegar, oyster sauce, a splash of Chinese rice wine, a drizzle of sesame oil eaten with a bowl of steaming boiled rice.

Wok Smoked Beef in Black Bean Sauce

Tender strips of beef marinated in Chinese rice wine and light soya tossed in a fiery wok with chopped black bean, garlic, ginger, spring onions, and red chillies.

Drunken Garlic Pak Choi

Fresh quartered pak choi stir-fried with crispy garlic, oyster sauce, a touch of sugar, drowsed with rice wine.

Golden Egg Fried Rice

The secret to good fried rice - each grain of rice is bouncy and individually coated with the egg mixture. Finished with a drizzle of toasted sesame oil and a sprinkling of chopped spring onions.

This is a practical interactive cookery session, remember to bring your takeaway containers to bring home your masterpieces to show off your new skills!  All the ingredients, equipment, recipes, and a working apron will be provided. Asian tea will be served throughout the class.
