There’s astounding complexity in the flavour profiles of Indian dishes, covering a full spectrum with spicy, sour, sweet and sometimes bitter notes. Spices are used liberally for flavour and chillies are added for heat and another flavour profile, these are all expertly balanced with the use of cream, yoghurt and the dishes lifted up with tomatoes and citrus.
You will be welcomed with a freshly shaken mocktail of
Mango puree, fresh lime juice, pinch of salt topped with mango fizz
You will learn:
- Knife sharpening and cutting skills
- Vegetable carving for garnish
- Presentation and plating skills
Recipes on this course may include:
Crisp fried parcel bursting with potatoes, onions, peas and spices, served with a fresh green chutney dipping sauce
Mint and Coriander Chutney
An additive combination of fresh mint, cilantro, green chillies and garlic freshened with a squeeze of lemon juice for a vibrant green chutney
Chicken marinated in warming tandoori marsala spices and Greek yoghurt, grilled to juicy perfection served with chunky wedges of fresh lemon
Chickpea Tikka Masala
This creamy chickpea curry is packed full of flavour from butter, garlic and heady spices like cardamom, ground cloves, cumin, cinnamon, coriander and pepper, finished with fresh tomatoes and cream
Tips to fluffy buttered basmati rice with the aroma of cumin, cloves, cinnamon, peppercorn and bay leaf
This is a practical interactive cookery session which will include dinner and a chance to bring home your masterpieces. All the ingredients, equipment and apron will be provided. Asian tea will be served throughout the day.
