Details

A typical Korean meal will consist of a ritual bowl of rice for each person and many little side dishes to share, of which many are fermented, pickled, salted or spiced; all dishes are served at once. Much emphasis is on vegetables and meat are cooked simply without much fat added to it. Flavours tend to be intense, spicy and pungent.

In this class, I am sharing a few very popular Korean dishes, which are also some of my personal favourite. Learn the art of fermentation and be introduced to flavours which has a whole unique flavour of its own, like gochujang ( Korean fermented chilli pepper paste). You will leave with confidence to cook rice and noodles, tips to crispy deep frying and balancing flavours.

Kimchi

Learn all about this famous traditional Korean dish. How to make it - the fermentation process. The health benefits - due to its natural fermentation process, it's rich in beneficial gut-boosting bacteria, a great source of vegetable probiotic food.

How it is used in cooking - Kimchi is a versatile dish that can be eaten on its own with steamed rice, or cooked with almost anything from dumplings to noodles, fried rice, Korean stew to pancakes etc. Come prepared to be bowed over by the bold flavours!

Bibimbap

“Bi-bim” means mixing various ingredients, while the “bap” refers to rice. Simply put, Bibimbap is a bowl combining a lot of ingredients, rice as the base, stir-fried vegetables, marinated fried beef, soy sauce, gochujang (Korean chili sauce) with the addition of a raw or fried egg. Korean fast food! You will also learn the secret to cooking the perfect fluffy rice, producing a crispy sunny side egg and how to tenderise and marinate the beef.

Japchae

I LOVE the chewy texture of sweet potato noodles! These noodles are stir-fried with crunchy carrots, fragrant bell peppers, wilted spinach and earthy mushrooms, all jested up with sweetened soya sauce and lavishly topped with nutty toasted sesame seeds. Once a royal dish, it is now one of the most popular traditional celebration dishes and one of Korea's best-loved dishes. It is the perfect make ahead dish for any party as it taste great served warm at room temperature or cold from the fridge.

Korean Fried Chicken

Korean fried chicken has taken the world by storm. They are very light and crispy because they are fried twice; the skin is therefore crunchier and less greasy. After frying, the chicken pieces are hand painted with Korean chilli sweet garlic sauce to evenly coat the skin. This is fried chicken paradise and the perfect accompaniment with BEER!

Presentation and Plating

Chinese Tea and water will be served throughout the day. You will sample some of your masterpieces at the end of the session and take home the rest to show off to your loved ones, please bring some containers.
