I think curries are the perfect go to when you need a boost and fancy something tasty, a plateful of soul food on steaming rice with flavours dancing on your tongue, what’s not to like?

In this class we will cook a couple of quick curries like the Japanese Katsu and Indian Dahl curries and another that requires longer cooking time, but the world renowned beef rendang is definitely worth that extra bit of time and love. I will also share tips on how to get the perfect fluffy rice and we will go another level cooking Turmeric rice which is not only delicious but has added health benefits.

Spicy Ginger Mint Fizz

Crushed mint, cinnamon syrup, a squeeze of lemon topped up with fizzy ginger beer 

You will learn:

- Knife sharpening and cutting skills

- Vegetable carving for garnish

- Presentation and plating skills

Indonesian Beef Rendang

This melt in your mouth caramelised dry beef curry was traditionally served at ceremonial occasions in Indonesia to honour guests. It is rich from thick coconut milk and a spice paste of galangal, turmeric, lemongrass, chilli, ginger, garlic and shallots

Japanese Chicken Katsu Curry

Succulent chicken marinated in mirin and soya, coated with Japanese panto breadcrumbs for a crispy crunchy finish, served with a sauce made so simply from onions, garlic and curry paste!

Indian Tarka Dhal (lentil curry)

Red split lentils cooked with turmeric, cumin, tomatoes, fresh green chillies and the last minute addition of fresh curry leaves and garlic fried in hot oil to add an intense aromatic flavour

Turmeric Rice

Buttered Jasmine rice with caramelised onion, ground turmeric and bay leaf simmered in vegetable broth

This is a practical interactive cookery session which will include dinner and a chance to bring home your masterpieces. All the ingredients, equipment and apron will be provided. Asian tea will be served throughout the day.
