In this class you will learn to balance the sweet, sour, spicy, salty, bitter and the ultimate umami and be brought to the streets of Thailand and Vietnam.

You will be welcomed with a freshly shaken mocktail of

Tropical Sunrise

A delicious and refreshing combination of pineapple, orange and mango juices with a touch of grenadine syrup.

You will learn:

- Knife sharpening and cutting skills

- Vegetable carving for garnish

- Presentation and plating skills

Recipes on this course may include:

Thai Red Curry 

Moderately spiced with bold flavours. We will share the intricate use of the different Thai curry pastes.

Vietnamese Spring Rolls

These fried rice paper rolls have a different crunch compared to the Chinese wheat spring rolls. 

Packed with minced pork, glass noodles and vegetables; it is so refreshing served in lettuce with plenty of fresh herbs. 

Nuoc Cham Dipping sauce

Punchy and refreshing flavours from fresh lime juice, fish sauce, raw chillies and garlic, Nuoc Cham is the principle sauce used lavishly as a dip, sauce or marinade in many dishes in the Vietnamese kitchen from summer and spring rolls to grilled meat to fried fish and many more. Its quick and easy to make and keeps for weeks in the fridge.

Som Tum 

Som means ‘sour taste’ and tum means ‘pounding with pestle to crush or break ingredients’. A sour and spicy salad that combines bold flavours with ingredients of choice. The co-ordinated act of pounding and scraping in the mortar is indeed satisfying.


This is a practical interactive cookery session which will include dinner and a chance to bring home your masterpieces.  All the ingredients, equipment and apron will be provided.  Asian tea and cucumber water  will be served throughout the day.
