I decided to combine vegetarian and gluten free dishes in this class as so many Asian dishes are naturally gluten free and lends well to full flavour fresh vegetables and bean-based protein.

The Asian style of cooking and seasoning packs flavour - freshness from herbs, heat from spices, amazing varieties and texture from rice and rice products. These dishes can also be tweaked to suit meat and seafood lovers when you are entertaining a mixed crowd.

You will learn:

Knife Skills

Vietnamese Pho Noodle Soup

A rich and complex broth with flavours from charred onions, roasted ginger, star anise, cinnamon, cardamom, and cloves lovingly slow-simmered and ladled over flat rice noodles. Serve with the traditional garnish of raw bean sprouts, sweet basil, fresh cilantro leaves, lime wedges, crispy onion and slivers of spring onions. Red chilli and pickled garlic to complete the dish .

Salted Chinese Five Spice Lotus Root

Deep fried lotus root tossed in fragrant five spice, salt, pepper and wok fried chopped garlic and spring onions .

Pad Thai Noodle Salad

Refreshing salad of spiralised carrots, courgette and mung bean noodles with fresh mint and coriander tossed in a zingy dressing, garnished with slivers of spring onions and a big handful of smashed peanuts .

Salad Dressing

A zingy dressing capturing the exotic sweet, sour, salty, spicy and umami flavours of Thailand, wonderful flavour combination of fresh lime, soya sauce, garlic, sugar and chilli .

Tandoori Tofu Skewers

Tofu marinated in warming ginger, garlic and tandoori marsala spice mix, interlaced with red onion and capsicum charred in a scorching oven; served with smoked garlic, Greek yoghurt and wedges of fresh lime .

Presentation and Plating

Chinese Tea and water will be served throughout the day. You will sample some of your masterpieces at the end of the session and take home the rest to show off to your loved ones, please bring some containers.
